Wedding Cupcakes

I did these cupcakes a while ago for a lovely couple, Laura and Josh. At the time of their wedding my camera was doing silly things and I did not get a good photo of their cupcake tower and topper. But recently Laura sent me some photos from her wedding, one of which is posted above. It was also really lovely to receive a handwritten thank you note in the mail. I made about 100 cupcakes all in white with an embossed swirl on the top. All different flavours of cake. She boxed up each cake to send home with her guests at the end of the night. I think this is a top idea as I know i am always so full at the end of a wedding that I often don't leave enough space to appreciate cake! I have decided I love doing cupcakes for weddings! And no, not just because I make a few extra for myself :)

Soccer Ball Cake

My 3 year old son got very excited when he saw this cake and was quite disappointed when I told him it was not his. He has been requesting a "Soccer" party for months now with no understanding that his birthday is not till the end of November! I am lucky that I enjoyed making this cake as I know that it will not be the last time I make it. There has been lots happening since my last post so apologies for the being M.I.A for so long. I am going to slightly change this blog as I want to offer some more tips and step by step instructions to some of the cakes that I make. So stay tuned, there will be heaps to come. Cake decorating is fun, if not addictive so if you have not worked with fondant, give it a go!

Snow White Cake

This Snow white cake was for the most adorable little princess, ''Snow White Tilly". My cute little niece turned 4 last week and celebrated her birthday with a princess party yesterday. I loved seeing her little face light up when she saw her birthday cake! I also loved seeing her eat her cake. She got chocolate all over her little face, but she was careful to brush the crumbs off her beautiful princess dress! She then proceeded to eat bites out of all the pieces of cake that were about to be served up to the adults! Can't ask for a happier little customer than that. Now I wonder whether she is still in her princess dress? I think it might have taken a lot to get her into her pj's last night!

Thomas The Tank

There is something very special about 1st Birthdays. Such a milestone for both parents and babies! My first cake this week was a Thomas themed number 1 cake. Mahhesh's mummy came up with a great design. She took ideas from various cakes, and I just adapted it all to create his cake. I loved making the figures and using such bright colours. It was such a large cake I had trouble photographing it!

James the Tank Engine

I am looking forward to making this weekends cakes but it is going to busy, as we are on the edge of wedding season! One of the cakes I am making is a Thomas themed cake for a first Birthday. As figure work is quite time consuming I made the sugar figures for the Thomas cake today. The faces are quite tricky to do, but I love the colours of James, so here is a preview.

Black and White

I love the look of black on a white cake as the contrast seems to make it ''pop''. Happy 50th Birthday to Johny! His elegant black and white themed party is tonight and his wife ordered this cake from me as an extra surprise for him. It was taken all the way to the central coast from Dural this afternoon. This is chocolate mud cake with happy celebration stars and black swirls. The one thing about black fondant is there is no room for error. Once that black stains the white, there is no going back! Despite that extra pressure I enjoyed making this cake, I hope they enjoy eating it too.

I make a lot of cakes, but it is not often that I get to eat them! This may be a good thing for my hips but my taste buds miss out! I made this cake for my brother as we had a special dinner for him last night. This is how they served up the cake and I have to say it was yummo! Behind us in a little private room Matthew Clarke (Cricketer) was having a function. Maybe I should have sent him in a piece.....nah.....too yum to give away! So here is the picture of the inside for a change. It is a strawberry, vanilla and chocolate cake, covered in buttercream frosting.

Experimenting

Being a bit of a rainy day, I decided to have a go making Cake Pops. I had some left over cake, so I thought I would give it a go. I mixed cake crumbs with some buttercream until moist. Then I rolled the cake into balls and put them in the fridge for a bit. I added the sticks, then dipped in white chocolate. It was just like making truffles. Then added the sprinkles. Warning: if you attempt to do these with a 2 year old "helping" you will end up with sprinkles EVERYWHERE! I am quite addicted to these and I would like to make them again. I will use smaller balls and proper lollypop sticks next time as they are by no means perfect. I would like to play around with the colour of the chocolate. I am not sure whether people would buy these, but they are yum and so much fun to make!

Noah's Ark Cupcakes

These Noah's Ark themed cupcakes were for a Mummy to be, who is having her baby shower today. The two by two animal theme suited the party as she is having twins! I had a lot of fun making the little animals, especially the elephants and hippos. I have a feeling she is having a boy and a girl.....who knows, how exciting to wait and see!

Cupcakes have been the popular theme at the moment. Though next week we have a graduation cake and the wedding cake orders are building up too. I have been inspired by the Masterchef v8 cake, so I am looking forward to doing some experimenting of my own. Now who wants to be a guinea pig??

Doggie Birthday Cakes

I am not sure what bread these dogs most look like, but I know they are mischevious little chocolate brown puppies! I had a bit of fun with these ones as I think my inspiration came from a book I used to be read as a child. "The Pokey Little Puppy". I think it was a Golden book and it was one of my favourites. So in true pokey little puppy style, one of my puppies bottom is sticking in the air, digging away. I created the ''dirt'' by colouring some caster sugar granules. Complete with little bones and puppy prints these are for a birthday party tonight, but could suit many occasions. I must dig that book out and read it to my son. Sorry about the bad pun.....

Sandra is a dog lover, so for her Bithday her friends ordered some puppy themed cupcakes for her as a surprise. With a girlie pink and green theme, this is what I cam up with. They are vanilla cupcakes, covered in white chocolate ganache and then fondant. I had fun dusting her name with edible gillter too!

Army of Frogs

A recent frog loving customer ordered 75 frog themed cupcakes for her Birthday party. It was quite a sight to see so many lined up on my kitchen bench! These were individually wrapped as little thank you gifts for every guest. I love that idea so I am now sourcing new little boxes that would be perfect for an individual cupcake gift.

Sam and Pete's Wedding

What a beautiful wedding and a gorgeous bride! I loved making this cake for my friend Sam and her lovely husband Peter. This is a 3 tier chocolate mud cake, covered in chocolate ganache. It is covered in ivory coloured fondant, with about 150 little white flowers. Each tier is separated with a ribbon covered block, which gives it a special and heightened look. It fit in perfectly at the reception, held at Wolfies in the Rocks. It is wonderful to be there to see one my cakes cut, eaten and enjoyed. Congratulations guys!

Teddy Bear Cupcakes

I made these little cupcakes for Ollie's Baptism last week. They were white chocolate mud cake, covered in white chocolate ganache and fondant. I love making the little fondant bears, ducks, booties and trains. It was a cute theme for the Baptism and these cakes would work for a baby shower and a first Birthday too.

On a different note, I am making hundreds of little flowers today for a wedding cake on Friday. It is for a special friend and I am really looking forward to making this one. Maybe I will also post a "How to make little flowers" post soon.....

100th Birthday!!

As a cake maker, it is not all that often that you get to make a cake for a 100th Birthday! A big Happy Birthday to the amazing Dorothy! This cake was a buttercake, covered in two thick layers of chocolate ganache. The theme was pink and sweet, so I designed a cake with pretty pink icing roses, little white flowers, and small details of piping. The most important thing was the 100 on the top. Dorothy had a lovely afternoon tea with her family, ate cake and read her letter from the queen.

Cupcake Icing

Even though I usually work with fondant, I enjoy working with Buttercream icing. (and eating it!) What are your best tips and recipes for buttercream? I have done a lot of research into different types of recipes and experimented with what is the best for piping. So I thought I would share my recipe and hints.

Buttercream Icing (frosting)

*1 cup of unsalted butter
*1/2 cup milk
*vanilla
*8 cups of icing sugar

1/ Mix butter, at room temperature, using beaters. Mix for two minutes.

2/ Add vanilla and slowly add up to 1/2 cup of milk for another two minutes or until creamy.

3/Add 4 cups of sifted icing sugar and then mix slowly at first and then on high until creamy.

4/Keep adding cup by cup until quite firm.

Tips

* To make icing as white as possible use a light coloured french butter. Also to step 2 add a squeeze of lemon juice. The acid in the lemon acts to make it whiter without flavouring the icing. Once you have more white icing than yellow, you can add colours that end up more pure.

* Place mixture in the fridge for a few minutes so it starts to set so that it is firmer to pipe.

* Use quite a large piping tip

* Pipe with a 90 degree angle to the cupcake. I pipe around the outside first and move to the middle. Don't pipe too fast otherwise the ribbons will go flat.

Sarah and Nathans Wedding

This cake is a chocoholics heaven! I had to buy myself extra easter eggs so I would not eat the ones for this cake! It has been very tempting indeed. This is a different style of cake from what I normally do. The lovely bride and groom saw this cake and asked me if I could make it. I think it is a great idea for an Easter wedding. ( I will never make this in summer!) The cake itself is one tier of Marble mud cake, chocolate, white chocolate and pink, and the top is a caramel mud. All covered in white ganache and topped with chocolate pannels. It is a beautiful day today and I wish Sarah and Nathan a fantastic day and a wonderful future together!

Sonya and Tom's Wedding

This is a cake I designed for Sonya and Tom's wedding that was held on Friday at Dockside Darling Harbour. They had an orange theme, so when we met up to discuss the cake, this was the design that we came up with. Sonya was an old friend that I knew from High school. It was a blast from the past to see her again and meet her husband, and extra special to be able to contribute to her wedding. The cake was 3 tier. The bottom layer was chocolate mud, the second layer was white chocolate mud infused with raspberries and the top tier was caramel mud. The theme was bows and elegance with a touch of orange. The cake weighed more than my son! I wish the happy couple all the best in their new journey together and I cant wait to see photos of the day!

Kitchen Tea

Sonya is getting married next week. Her lovely bridesmaids ordered this Tiffany cake from me for her Kitchen Tea today. They found the design they wanted and asked me to make it for them. With a couple of my own personal touches, here is the finished product. A Tiffany shopping bag full of cooking utencils. It is a chocolate mud cake covered in chocolate ganache. I hope she got some real Tiffany though! I am looking forward to making her wedding cake next week, so look out for the pictures coming soon!

Julie and Sat's Wedding

This wedding cake was for Julie and Sats, they were married today! Congratulations! Julie is a friend of mine from my childhood, and I adored making this cake for her special day. A wedding with 300 people = a big cake! This 4 tier cake includes a two chocolate mud cakes, a white chocolate mud cake with mixed berries and a marble mud cake. An extremely heavy cake it was quite a feet to get it delivered in today's rain. (thanks team). On consultation with the bride, I designed the cake to match Julie and Sats purple theme. The extra sparkles were added to match Julies dress as well as the pearls wrapped around the bottom and third layer. The last shot is a view from the back. The reception hall looked beautiful. I wish Julie and Sats all the best in their new journey together as Mr and Mrs.

Princess Castle

Little Beth loved this cake and it was a party hit. Underneath the pink icing (very pink) was more pink. A yummy raspberry chocolate mud cake. mmmm. Did I say there was a lot of pink at this party!

Happy Christmas everyone.....um I mean Happy New year everyone! Sorry, I am a bit behind! I wanted to post these cakes that I did on Christmas eve. With all 50 of them lined up on my bench I could not help but feel very Christmasy! ( I know it is not a word!) I loved doing the little gifts and snowmen. I will have to wait till next year to do more! Ah well, plenty of Birthday, Wedding and Christening cakes to keep me busy before then.

My son James is a huge fan of Shaun the Sheep. So for his 2nd birthday yesterday, I designed and made this cake for his party. Whilst I still cant get over how time has flown so quickly and my little boy is two, I really loved making this special cake for him. He was very excited once he realised that this "big cake" was for him. All the decorations I made out of fondant. You can see from the photo that, like his mummy, he takes cakes very seriously! But not a crumb was left but there were a lot of chocolate faced kiddies!

This cake was made for a friends baby shower. She is having a girl in about 6 weeks time! It is a chocolate mud, covered in a layer of melted dark chocolate and then fondant. I love making the little clothes for the clothes line and the pastel colour scheme would match any baby shower theme.

A very big happy 21st to Sonya! I made this chocolate mud cake on possibly the hottest day Sydney has seen in a while! I made the little silver pearls out of small balls of fondant.
